Day 17 – Apple Nachos

Hoppy Easter, everyone! ๐Ÿ‡ For those who celebrate, I hope the Easter bunny was good to you. For those who don’t, happy Sunday Funday! Ya know what I never understood about Easter, I understand that it’s to celebrate the resurrection of Jesus, but what does a bunny and finding eggs have to do with it? Rabbits are mammals. Rabbits don’t lay eggs, they give birth to their kittens. So where is the rabbit getting the eggs from? Is he stealing them from the local birds’ nest? Is he playing a sick game of hide and seek, hiding the unhached birds from their mother? Even with that theory, we send kids to look for the eggs with prizes in them. What happened to the hatchlings?! This sounds like a shady rabbit mascot. But I’m sure the twisted person that came up with this idea is raking in the bunny money. Is this also where we got the idea that a rabbit’s foot is lucky? Stick with me on this one. When Jesus resurrected, it restored hope, faith, and the belief that through pain and suffering will come goodness and new life. I’m sure it wasn’t pleasant for the rabbit to get his foot cut off and have it donated to someone’s rear view mirror. Does the rabbit’s pain transfer through its foot and benefit the keychain owner? Food for thought

Like many other large families, holidays are split between families. Typically I spend Easter at my uncle’s house 20/30 minutes from my house. Since I’m still testing positive for COVD, I didn’t feel comfortable being around family. The statistics say that you shouldn’t be contagious after the isolation period but the stats are not 100%. I’d rather stay home and not risk exposing my 87 year old granny and 8 month old cousin. Instead, today was mostly a homework and chill kind of day.

By late afternoon/early evening I had about enough western civ and scanned through my “at home” list of things to accomplish. I’m not a TikTok-er. I’m really not a social media person. Saying that, I have obviously seen TikTok videos that are reposted everywhere. Some of the hacks, tips, and tricks are pretty interesting.

I found a recipe for “apple nachos” and it looked soo good. Basically, it’s a twist on caramel apples. The apples are cut into slices and topped with caramel, peanut butter, or chocolate then sprinkled with dessert toppings of your choice. One of my favorite snacks to make is apple cinnamon crescents a.k.a. apple pie bites, so this recipe looked right up my alley.

The TikTok videos were easy to follow but I wanted something with written step by step instructions so I didn’t have to pause and replay the video with every step. The blog that I found did 3 versions of nachos, which was exactly what I wanted to do. I am partial to green apples but I cut up both green and red to get the full nacho effect.

Her suggested toppings included

  • peanut butter, chopped peanuts and mini chocolate chips
  • chocolate sauce, white chocolate drizzle and mini M&Mโ€™s candies
  • caramel sauce, chopped pecans and chocolate toffee pieces

This recipe said it would take 10 minutes, but it probably took me 30 – 40 minutes since I didn’t pre-plan my toppings.
